Instructions
 

  • In a shaker, combine Pisco, freshly squeezed lime juice, simple syrup, and the egg white (if using).
  • Dry shake (shake without ice) vigorously for about 10-15 seconds to emulsify the egg white and mix the ingredients.
  • Add ice to the shaker and shake again for another 10-15 seconds to chill the mixture.
  • Strain the cocktail into a chilled coupe glass or an Old Fashioned glass filled with ice.
