Ingredients
  

  • 2 oz (60 ml) Mezcal
  • 3 oz (90 ml) Grapefruit juice (freshly squeezed, if possible)
  • 1/2 oz (15 ml) Freshly squeezed lime juice
  • 1/2 oz (15 ml) Agave syrup or simple syrup
  • Soda water
  • Grapefruit wedge for garnish
  • Salt or Tajin (optional, for rimming)
  • Ice cubes

Instructions
 

  • If rimming the glass, moisten the rim of a highball glass with a grapefruit or lime wedge and dip it into salt or Tajin (optional). Set aside.
  • Fill the glass with ice cubes.
  • In a shaker, combine mezcal, freshly squeezed grapefruit juice, lime juice, and agave syrup (or simple syrup).
  • Fill the shaker with ice and shake vigorously for about 10-15 seconds to chill the mixture.
  • Strain the mixture into the prepared highball glass over fresh ice.
  • Top up the glass with soda water.
  • Garnish your Mezcal Paloma with a grapefruit wedge.
  • Serve!
