- 1/2 cup Fresh pineapple chunks
- 6-8 Fresh mint leaves
- 3/4 oz (22.5 ml) Freshly squeezed lime juice
- 1/2 oz (15 ml) Simple syrup or to taste
- Club soda or soda water
- Pineapple wedge and mint sprig for garnish
- Crushed ice
